Portugal is easy driving: 

Just drive careful and watch out traffic. Police does not harm you in any case.

Off-roading is great - wild roads, gravel roads ... great nature - just enjoyable.

People are friendly and helpful. 

Food and wine is world class and very affordable for Europe !
